  • Total Time: ~3 hours

Serving Size

Ingredients

☐ 2 cups heavy cream
☐ 4 large egg yolks
☐ 1/3 cup keto-friendly sweetener (erythritol or monk fruit blend)

☐ Pinch of salt
☐ 2–3 teaspoons keto sweetener (for topping/caramelizing)

Instructions

☐ Preheat oven to 325°F (160°C)
☐ Heat heavy cream in a saucepan over medium heat until just simmering (do not boil)
☐ In a bowl, whisk egg yolks with sweetener until smooth
☐ Slowly pour warm cream into egg mixture while whisking (temper the eggs)
☐ Stir in vanilla extract and salt
☐ Strain mixture for a smooth texture (optional but recommended)
☐ Pour into ramekins
☐ Place ramekins in a baking dish and add hot water halfway up sides (water bath)
☐ Bake for 35–40 minutes until centers are set but slightly jiggly
☐ Remove and cool to room temperature
☐ Refrigerate for at least 2 hours
☐ Sprinkle sweetener evenly on top
☐ Use a kitchen torch to caramelize until golden and crisp
☐ Let topping harden, then serve

Tips & Variations

  • Use a torch for best caramelized topping (broiler can work carefully)
  • Allulose works best for caramelizing compared to erythritol
  • Do not overbake—custard should still jiggle slightly
  • Straining removes bubbles for a smoother finish
  • Add orange zest or espresso powder for flavor variations
